i've come to love beets and the flavor and texture of the earth they impart to my meals. i find that their flavor works so well with a touch of acidity and the more the merrier. this dish includes a kefir or plain full fat yogurt, lemon juice and feta cheese. the addition of pea shoots and dill are just the right textural difference to bring the dish together.
i vigorously brush the beets under water to get a lot of the dirt off but seldom peel them anymore. i like a little dirt in my veggies! slow roasting with butter and salt in tin foil seems to concentrate the flavor of the beets. a 350 degree oven is fine, for around 45 minutes depending on size. once you can put a knife though easily, you'll know the beets are done. mix with cubed feta, and dill and pea shoots. prepare the yogurt sauce. add parsley, salt and pepper and lemon juice to taste.
